How to Prepare Millet Noodles in Hakka Style

Millet noodles prepared in Hakka style offer a delicious and healthy alternative to traditional wheat-based noodles. This recipe combines the nutty flavor of millet with the savory taste of Hakka-style cooking. Follow these steps to create a flavorful and nutritious dish.

Ingredients:

  • 200g Rinkles millet noodles
  • 2 tablespoons vegetable oil
  • 1 cup mixed vegetables (carrots, bell peppers, cabbage, etc.), finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 green onions, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon vinegar
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 2 tablespoons Hakka-style masala (divided)

Instructions:

  1. Cook the Millet Noodles:
  • Bring a large pot of water to a boil.
  • Add the millet noodles and cook according to package instructions, usually about 4-5 minutes.
  • Once cooked, drain the noodles immediately and rinse with cold water to stop the cooking process.
  • Set aside.
  1. Prepare the Vegetables:
  • While the noodles are cooking, chop all your vegetables finely.
  • Mince the garlic and grate the ginger.
  1. Make the Sauce:
  • In a small bowl, mix soy sauce, vinegar, sugar, salt, and pepper.
  1. Cook the Dish:
  • Heat oil in a large wok or pan over medium-high heat.
  • Add minced garlic and grated ginger. Sauté for 30 seconds until fragrant.
  • Add the chopped vegetables and stir-fry for 2-3 minutes until they start to soften but remain crisp.
  • Sprinkle half of the Hakka-style masala over the vegetables and stir well.
  • Add the drained millet noodles to the pan and toss gently to combine with the vegetables.
  • Pour the sauce over the noodles and add the remaining half of the Hakka-style masala.
  • Stir-fry everything together for 2-3 minutes, ensuring the noodles are well coated with the sauce and masala.
  1. Finish and Serve:
  • Add the chopped green onions and give a final toss.
  • Taste and adjust seasoning if needed.
  • Serve hot, garnished with additional green onions if desired.
